Breakfast to go

Three sweet and savory easy to make and ready to go breakfast ideas for busy people like you.

Often referred to as the “most important meal of the day”, breakfast is probably my favorite meal of the day. If you remember from my previous posts, I do enjoy waking up early, before everybody else does to have some much-needed time for myself. But life is busy, and it seems to get busier each day. One day you rush out the door, other days you trade breakfast for ten more minutes of sleep, or spend more time in the shower than usual, or simply spend too much time searching for your keys, your phone, your favorite shoes or your sanity…

Eating breakfast is important and there are many health benefits to eating breakfast. It improves your energy levels and capacity to concentrate, it improves your heart health, reduces the risk of type 2 diabetes and can help with managing weight. Despite its many health benefits, many people skip it for many reasons. But have no fear, there are many ways to fit breakfast into your busy day.

One way that I find it useful is to prepare breakfast the evening before and take it with me to the office. Yes, it’s a bit of organization and (especially in my case) huge reminders not to forget to take it with me. Whether you’re a sweet or more the savory morning eater, here are three sweet and savory breakfast ideas, that are ready in no time and good to go in the morning.

Berries clafoutis with a twist

This is a healthy version of the classic clafoutis recipe. If you know what clafoutis is, you also know that is made with sugar, flour and milk ( or cream).  This version of it is much lighter and fills you up in no time.

What do you need?

  • 1 cup of fresh berries (I used blueberries and strawberries, if you use strawberry, make sure you slice them)

  • 150 g of plain yoghurt

  • 2-3 tb spoons of maple syrup (depends how sweet you prefer)

  • 50 g of almond powder

  • 2 eggs

Mix the ingredients all together, preheat the oven for 10 minutes at 200° and let it bake for 15 minutes ( or until it’s done, it depends of your oven).

Tada…..it’s delicious!

Banana oat crumble

I prepared the crumble for this one using oat and peanut butter- no flour and no better. This is a very tasty, high in protein recipe that will stop you from snacking between meals.

What you need?

  • 2 ripe bananas

  • 90 g of oat

  • 70 g of peanut butter

  • 40g of chocolate chips

Smash the bananas in a bowl, add the oat crumble and the chocolate chips. There is no need to add any sugar, it is sweet enough from the bananas. Preheat your oven at 200° for 10 minutes and bake for about 20 minutes.

Let it cool over night and take it with you at work.

Frittata to go

For those of you that don’t have the sweet tooth and prefer eating savory in the morning, this recipe is great.

You need:

  • 3 eggs

  • 30 g of feta cheese

  • 3-4 cherry tomatoes sliced

  • Some asparagus

  • Some pepper slices

  • Add salt and pepper as you wish

Mix the ingredients all together, place the mixture in a recipient and put it in the preheated oven. Let it bake for about 10-15 minutes at 200°. Next day is ready to get, remember to take it with you.

Enjoy your healthy and filling breakfast 😉
